Yogurt Making Instructions

You will need:

  • a 36-hour yogurt maker with independent time/temperature settings.  My favorite is the

Ultimate Probiotic Yogurt Maker (Amazon):

  • Organic half and half (lactose free is ok), 32 oz container

  • Organic inulin

  • LifeWay plain Kefir

  • food thermometer

  • probiotic strains (see below).  Ingredients here are for the SIFO Supergut Yogurt, but the instructions remain the same for all strains on reverse, other than prebiotic and time/temp can vary (see chart). 

  • Dairy-free: substitute L. Rhamnosus capsule for the Kefir.  Use organic canned coconut milk (no additives except guar gum is ok if included).  Instead of inulin as your prebiotic, you will need 3/4 t. non-partially-hydrolyzed guar gum, 1 T. raw potato starch, and 1 T. sugar.  Sanitize your equipment (see below).  Heat 1 qt (32 oz) coconut milk to 180 degrees maintained for 1 minute.  Stir in sugar and potato starch (sprinkle as you stir).  Remove from heat and cool 5 minutes, then sprinkle as you stir in 3/4 t. guar gum.  Blend with immersion blender 1 minute or until it reaches texture of heavy cream.  Allow to cool to room temperature, then stir in (do not blend further) opened probiotic capsules or 2 T. whey from prior yogurt batch.  Ferment for 48 hours.

 

To make yogurt:    Follow these directions, not yogurt maker's directions. 

 

Sanitize the following in your dishwasher: mixing bowl, medium saucepan, stainless tablespoon, wire wisk, and a small plate to place your utensils on during the process.  Wash thermometer in hot soapy water.

  • Heat half and half to 180 deg in saucepan.  Remove from heat and let it cool to 104 deg. 

  • First batch: open probiotic capsules into the mixing bowl.  Subsequent batches: put 2 T of previous batch yogurt into the mixing bowl.  You only need the capsules and kefir for the first batch.

  • Stir in 2 T. LifeWay Kefir.  Mix well using the wisk.

  • Add 2 T. cooled half and half.  Mix/wisk well.

  • Sprinkle 2 T. inulin over top surface in small doses (to prevent clumping) and wisk in until you use all 2T.  Wisk until well distributed.

  • Add the rest of the cooled half and half and mix well.

  • Pour mixture equally into yogurt containers and place them into the yogurt maker with lids on.

  • Put water in yogurt maker to level of yogurt in the containers.

  • Set temperature to 106 deg.  Set time to 36 hours (this is default setting on above maker).

  • Once done, put in refrigerator for several hours or overnight before eating.

  • Consume: 1/4 to 1/2 cup daily for 8-12 weeks.  Add ins of berries or honey are ok.  Once your gut is better, you can add stevia or allulose sweetener if desired.

  • Save 2 T. from this batch for the next batch.

Yogurt Probiotics    

SUPERGUT SIBO YOGURT:

  • 1 capsule MyReuteri (Oxiceutics.com)

  • 2 capsules L gasseri BNR-17 (Dr Mercola BioThin)

  • 2 capsules B subtilis HU58 (Microbiome Labs)

 

SUPERGUT SIFO YOGURT:

  • ADD to above: Lifeway Kefir Plain (Pick n Save) as it contains L Rhamnosus.  Or if dairy free, use L Rhamnosus capsule. 

  • Benefits: May reduce symptoms of small intestinal bacterial (SIBO) or fungal (SIFO) overgrowth such as bloating, abdominal pain, diarrhea, constipation, fatigue, brain fog, weight loss resistance.

 

For Both:

  • Prebiotic Type: 2 T inulin or raw potato starch

  • Cooking Directions: 106 deg, 36 hrs

L REUTERI:

  • 1 capsule or 5 billion CFU's MyReuteri (Oxiceutics.com)

  • Benefits: May smooth skin wrinkles, increase skin moisture, increase collagen, accelerate healing, promote muscle building, provide oxytocin boost, protect against SIBO.

  • Prebiotic Type: 2 T inulin or raw potato starch

  • Cooking Directions: 

    • L Reuteri alone: 100 deg,  36 hrs.

    • Mixed with other strains: 106 deg, 36 hrs.

  • Need 2 capsules

  • Cooking Directions: 115-122 deg, 36 hrs.

  • Cooking Directions: 109 deg, 36 hrs.

  • One 2 oz bottle Yakult (found at Walmart, Meijer, etc. in refrigerated dairy section next to yogurts and kefirs).

  • Benefits: immune support: antiviral

  • Cooking Directions: 109 deg, 36 hrs.
